Basic Lemon Meringue Pie Recipe
Serves 6 Ingredients: 2 eggs, separated
1/4 cup fresh lemon juice
1 tbsp lemon zest, grated
3 tbsp all-purpose flour
1 cup sugar
2 tbsp butter
1 1/4 cups boiling water
1 9-inch pie crust
3 tbsp sugar
Instructions: 1. In a heavy saucepan, beat egg yolks with lemon juice and zest.
2. Place under low heat.
3. Beat in flour, 1 cup sugar, and butter.
4. Add boiling water, cook and stir until mixture thickens.
5. Pour into prepared pie crust.
6. Beat egg whites until stiff, but not dry.
7. Gradually add 3 tablespoons sugar.
8. Spread over filling.
9. Bake at 450 F until meringue is browned.
