Fruity Gazpacho Recipe

Serves 4



Ingredients:

  • 1 1/2 lb tomatoes, skinned
  • 1 tbsp lemon juice
  • 1/2 pint vegetable stock
  • Salt and pepper
  • 1 small onion, finely chopped
  • 1 4" piece cucumber, chopped
  • 1 yellow bell pepper, julienne
  • 2 peaches, thinly sliced
  • 1 apple, thinly sliced
  • 4 tbsp blackberries or other, soft fruit
  • 3 tbsp parsley, chopped


  • Instructions:

    1. Blend the tomatoes and lemon juice until smooth.
    2. Stir in the stock and season with salt and pepper.
    3. Stir in the remaining vegetables and fruits.
    4. Cover and chill for at least 1 hour to allow the flavours to blend.
    5. Just before serving, stir in the parsley.
    6. Serve with oatcakes.
