Fruit Soup Recipe

Serves 4 to 6

Fruits Soups

Ingredients:

  • 2/3 cup apricot nectar
  • 1 tsp cornstarch
  • 1 tsp brandy
  • 1 tsp honey
  • 1/8 tsp ground allspice
  • 1 cup peeled and sliced fruits (can be papayas, peaches or pineapples; cut up apricots, nectarines, or plums; or halved and pitted dark sweet cherries)


Instructions:

1. In a nonmetal bowl stir together apricot nectar and cornstarch.
2. Stir in brandy, honey, and allspice.
3. Micro-cook, uncovered, on 100% power for 2 to 3 minutes or till the mixture is thickened and bubbly, stiring every 30 seconds.
4. Stir in fruit.
5. Micro-cook, uncovered, on 100% power for 45 seconds to 1 minute or till heated through.
6. Chill thoroughly, if desired.
7. Serve hot or cold.
