Empire State Muffins Recipe

Makes 24 muffins

Ingredients:

  • 2 cups shredded unpeeled apples
  • 1 1/3 cups sugar
  • 1 cup chopped cranberries
  • 1 cup shredded carrots
  • 1 cup chopped pecans or walnuts
  • 2 1/2 cups flour
  • 1 tbsp baking powder
  • 2 tsp baking soda
  • 1/2 tsp salt
  • 2 tsp ground cinnamon
  • 2 eggs, lightly beaten
  • 1/2 cup vegetable oil


Instructions:

1. In a large mixing bowl combine apples and sugar.
2. Gently fold in cranberries, carrots and nuts.
3. In another bowl combine flour, baking powder, baking soda, salt and cinnamon.
4. Mix well.
5. Add to apple mixture.
6. Mix well to moisten dry ingredients.
7. Combine eggs and oil; stir into apple mixture.
8. Fill 18 greased muffin tins 2/3 full.
9. Bake at 375 degrees for 20 to 25 minutes.
10. Cool 5 minutes before removing from tins.
