Diabetic Tropical Fruit Compote Recipe

Serves 4 to 6

Ingredients:

  • 1 can (15-1/4 oz) Del Monte pineapple tidbits in own juice
  • 1 banana, sliced
  • 1 cup quartered strawberries
  • 1 kiwifruit, sliced or seeded
  • Grapes
  • 1 cup jicama pieces or apples
  • Orange-flavored liqueur
  • Sprigs of fresh mint, if desired


  • Instructions:

    1. Drain pineapple, reserving juice.
    2. Moisten sliced banana with juice to prevent browning; drain.
    3. Arrange fruit in dish; drizzle with liqueur.
    4. Garnish with sprigs of fresh mint, if desired.
