Diabetic Tropical Fruit Compote Recipe
Serves 4 to 6 Ingredients: 1 can (15-1/4 oz) Del Monte pineapple tidbits in own juice
1 banana, sliced
1 cup quartered strawberries
1 kiwifruit, sliced or seeded
Grapes
1 cup jicama pieces or apples
Orange-flavored liqueur
Sprigs of fresh mint, if desired
Instructions: 1. Drain pineapple, reserving juice.
2. Moisten sliced banana with juice to prevent browning; drain.
3. Arrange fruit in dish; drizzle with liqueur.
4. Garnish with sprigs of fresh mint, if desired.
