Date Muffins Recipe

Makes 18 muffins

Ingredients:

  • 1 cup cooking dates, chopped
  • 1 cup boiling water
  • 2 tbsp vegetable oil, or vegetable shortening
  • 1 3/4 cups all-purpose white flour
  • 1 tsp vanilla
  • 1 tsp baking soda
  • 1 cup brown sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup walnuts, chopped


  • Instructions:

    1. Combine dates, water and oil or shortening.
    2. Let cool.
    3. Combine the baking soda with the flour and mix well.
    4. Add the brown sugar, baking powder, vanilla, salt and nuts to the date mixture.
    5. Mix well.
    6. Gently fold in the flour and baking soda mixture. If too dry, add a little more water.
    7. Bake in greased muffin pans at 325 F for 25 minutes, or until cooked through.
