Date-Nut Muffins Recipe
Makes 12 muffins Ingredients: 1 1/4 cups whole wheat flour
1/2 tsp salt
1/2 tsp baking soda
2 tsp baking powder
1/2 cup wheat germ or bran
1/2 cup chopped dates
1/2 cup chopped walnuts
2 tbsp oil
3 tbsp molasses
1 cup apple juice
1 tsp lemon zest
1/4 tsp allspice
Instructions: 1. Mix flour and leavenings in a large bowl.
2. Stir in bran or germ, dates, and nuts.
3. Mix remaining ingredients in another bowl until smooth; add to flour mixture.
4. Stir just to combine.
5. Drop into muffin cups.
6. Sprinkle rolled oats on top to look pretty.
7. Bake at 375 F for 15 to 20 minutes.
