Date-Nut Muffins Recipe
Makes 24 muffins Ingredients: 2 cups dates, chopped
2 cups water
2 tsp baking soda
1 cup margarine
2 cups sugar
2 large eggs
3 1/3 cups flour
1/2 tsp salt
2 tsp vanilla extract
2 cups pecan pieces, coarsely chopped
Instructions: 1. In large saucepan combine dates, water and baking soda.
2. Bring to a boil.
3. Remove from heat and set aside to cool completely.
4. Preheat oven to 350 F.
5. Grease 2 12-cup muffin pans with solid vegetable shortening or spray with a nonstick spray and set aside.
6. Cream margarine and sugar together in large bowl of mixer until light and fluffy.
7. Beat in eggs.
8. Add flour and salt, beating until just combined.
9. On low speed, beat in date mixture, vanilla and pecans.
10. Fill prepared muffin pans 3/4 full with batter and bake for 20 to 25 minutes.
