Cream of Mango Soup Recipe

Makes 1 1/2 qts or 6 cups

Ingredients:

  • 2 eggs, well-beaten
  • 1/3 cup sugar
  • 1 tbsp vanilla
  • Juice and grated peel of 1 lemon
  • 1 ripe mango, pitted, peeled and coarsely chopped
  • 2 cups heavy cream
  • 3 cups milk
  • Garnish:
  • Fresh blueberries
  • Fresh strawberries, coarsely chopped


  • Instructions:

    1. In blender or food processor, puree eggs, sugar, vanilla, lemon juice, lemon peel and mango.
    2. In large bowl, whisk cream and milk until frothy.
    3. Slowly add mango to mixture, whisking constantly.
    4. Cover and chill well.
    5. To serve, stir and laddle into chilled bowls.
    6. Garnish with blueberries and strawberries.
