White Bean and Tropical Fruit Chutney Recipe

Serves 4

Ingredients:

  • 1 1/2 tbsp olive oil
  • 1 tbsp chipotle pepper, minced
  • 1/2 cup onion, finely diced
  • 2 cloves garlic, finely minced
  • 1 cup mango, finely diced
  • 1 cup pineapple, finely diced
  • 1 1/4 cups sugar
  • 1/4 cup lime juice
  • 1/4 cup orange juice
  • 2 tsp balsamic vinegar
  • 1 cup dry vermouth
  • 2 16-oz cans white beans, drained
  • Salt and pepper, to taste


  • Instructions:

    1. Heat oil.
    2. Saute chopped chipotle (with adobo sauce).
    3. Add onion, then garlic.
    4. Cook for 5 to 7 minutes.
    5. Add sugar and fruits.
    6. Cook several minutes more.
    7. Add liquids and simmer until thick, about 1/2 hour.
    8. Add beans.
