Raspberry Mousse Recipe

Serves 8

Ingredients:

  • 1/2 cup apple cider or juice
  • 1 tbsp agar-agar flakes, or 1 envelope Knox
  • 1 10 1/2-oz pkg soft silken tofu
  • 3 tbsp honey
  • 3 cups raspberries, or strawberries
  • 1 tsp vanilla
  • Mint sprigs (for garnish)


Instructions:

1. In saucepan over low heat, bring cider to a simmer.
2. Add agar-agar; stir until dissolved, about 5 minutes. Or soften gelatin in juice, then heat and stir until dissolved.
3. In food processor bowl, combine cider mixture, tofu, honey, raspberries or strawberries, and vanilla.
4. Process to desired texture.
5. Pour into dessert dishes, or single mold.
6. Chill for at least 1 hour.
7. Garnish with mint.
