Cranberry Muffins Recipe
Makes 12 muffins Ingredients: 2 1/4 cup unbleached flour
1/4 cup sugar
3/4 tsp baking soda
1/4 tsp salt
1 large egg
3/4 cup buttermilk
1/4 cup vegetable oil
1 cup cranberry
1/2 cup sugar
Instructions: 1. Sift together flour, 1/4 cup sugar, baking soda and salt into bowl.
2. Combine egg, butter/sour milk and oil in small bowl; blend well.
3. Add all at once to dry ingredients, stirring just enough to moisten.
4. Combine cranberries and 1/2 cup sugar; stir into batter.
5. Spoon batter into greased 2 1/2-inch muffin-pan cups, filling 2/3rds full.
6. Bake in 400 degrees oven 20 minutes or until golden brow.
7. Serve hot with butter and homemade jelly or jam.
