Cranberry Muffins Recipe
Makes 12 muffins
Per Muffin: Calories 140.4, Fat 0.5g, Carbs 29.9g, Fiber 0.5g, Pro 4.3g, Sod 151mg, CFF 2.9%.
Ingredients: 1 cup unsweetened applesauce
3/4 cup nonfat dry milk powder, reconstituted
1 egg beaters® 99% egg substitute
1/2 tsp canola oil
2 cup flour, unbleached
1/2 cup sugar
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp ground cinnamon
1/2 cup cranberries, coarsely chopped
Instructions: 1. Coat 12 muffin cups with nonstick spray.
2. Combine applesauce, milk, egg and oil.
3. Whisk together flour, sugar, baking powder, baking soda and cinnamon.
4. Gently mix in cranberries.
5. Stir into applesauce mixture, and mix until just combined.
6. Divide batter among muffin cups.
7. Bake at 400 deg F until a toothpick comes out clean, about 20 minutes.
8. Remove muffins from pan and place on a wire rack to cool.
