Cranberry Chutney Recipe
Makes 2 to 3 cups Ingredients: 1 1/2 cups fresh cranberries
16 dried apricot halves, quartered
3/4 cup brown sugar
1/3 cup dried currants (or raisins)
2 tbsp fresh ginger root, minced
2 tbsp cranberry cocktail juice
3/4 tsp ground cumin
1/4 tsp cayenne pepper
Instructions: 1. Combine all ingredients in a heavy saucepan and cook over medium heat to dissolve sugar.
2. Increase heat and boil for 3 minutes.
3. Transfer to a bowl and cool.
4. Serve warm or cold. Great on turkey leftover sandwiches!
