Cranberry-Corn Muffins Recipe

Makes 12 muffins


  • 3/4 cup flour
  • 1/2 cup whole wheat flour
  • 1 cup yellow corn meal
  • 1/3 cup to 1/2 cup sugar, to taste
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt (optional)
  • 2/3 cup buttermilk
  • 1/3 cup orange juice
  • 1/3 cup vegetable oil
  • 1 egg
  • 4 tsp grated orange rind
  • 1 cup fresh cranberries, coarsely chopped


1. Preheat oven to 400F.
2. In a large bowl, combine the flours, meal, sugar, baking powder, baking soda, and salt.
3. In a 2-cup measure or small bowl, combine the buttermilk, orange juice, oil, egg, and orange rind.
4. Add buttermilk mixture to the flour mixture, stirring the ingredients until they are just moist.
5. Stir in the cranberries.
6. Distribute the batter among 12 greased muffin cups.
7. Place the muffin tin in the hot oven, and bake the muffins for 20-25 min
