Blue Corn Muffins with Cranberries Recipe

Makes 10 muffins

Ingredients:

  • 3/4 cup finely ground blue cornmeal
  • 1 cup unbleached white flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • Pinch of salt
  • 1 egg
  • 1 egg white
  • 3/4 skim milk
  • 1/3 cup canola oil
  • 1/2 cup honey or maple syrup
  • 3/4 cup cranberries


Instructions:

1. Preheat oven to 350 F.
2. Stir together dry ingredients.
3. In separate bowl, stir together liquid ingredients.
4. Mix liquid and dry ingredients until just combined; batter will be lumpy.
5. Stir in cranberries.
6. Fill oiled muffin tin about 3/4 full with batter.
7. Bake until toothpick comes clean, about 18 tp 20 minutes.
