Blueberry Buttermilk Soup Recipe

Serves 5 or 6

Ingredients:

  • 2 cup blueberries, washed
  • 1 1/2 cups water
  • 1/2 cup sugar
  • 1/2 tsp grated orange rind
  • 2 tbsp orange juice
  • 2 cups buttermilk
  • 1 thin orange slices


  • Instructions:

    1. Set aside a few blueberries for garnish.
    2. Combine remaining berries, water, sugar, orange rind and orange juice in a saucepan.
    3. Bring to a boil.
    4. Cover and reduce heat.
    5. Simmer 20 minutes.
    6. Cool.
    7. Press blueberries through a sieve or puree till smooth in a blender.
    8. Stir in buttermilk.
    9. Chill until icy cold.
    10. Over each serving, float orange slice topped with a few blueberries.
