Blueberry Buttermilk Soup RecipeServes 5 or 6 Ingredients:Instructions:1. Set aside a few blueberries for garnish.2. Combine remaining berries, water, sugar, orange rind and orange juice in a saucepan. 3. Bring to a boil. 4. Cover and reduce heat. 5. Simmer 20 minutes. 6. Cool. 7. Press blueberries through a sieve or puree till smooth in a blender. 8. Stir in buttermilk. 9. Chill until icy cold. 10. Over each serving, float orange slice topped with a few blueberries. |
