Quick Blueberry Muffins Recipe

Makes 12 muffins

Ingredients:

  • 1 cup vanilla ice cream, softened
  • 1 cup self-rising flour
  • 1 cup fresh blueberries
  • 1 tbsp butter or margarine, melted
  • 2 tbsp sugar


Instructions:

1. In a medium bowl, mix ice cream and flour.
2. Fold in blueberries.
3. Spoon into six greased muffin cups.
4. Bake at 375 for 20-25 minutes or until muffins test done.
5. While hot, brush muffin tops with butter and sprinkle with sugar.
6. Serve warm.
