Oatmeal Blueberry Muffins Recipe

Makes 12 muffins

Ingredients:

  • 1 cup rolled oats
  • 1/3 cup salad oil
  • 1 egg
  • 1 cup buttermilk or sour milk
  • 1/2 cup brown sugar (packed)
  • 1 1/2 cup blueberries
  • 1 cup unbleached flour
  • 1/2 tsp soda
  • 1 tsp cinnamon
  • 1/4 tsp ground cloves
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp allspice
  • 1/4 tsp nutmeg


Instructions:

1. Soak oats in milk until moisture is absorbed.
2. Add salad oil, egg, brown sugar and blueberries and mix thoroughly.
3. Mix together flour, soda, cinnamon, cloves, baking powder, salt, allspice and nurmeg and add to oat mixture.
4. Mix thoroughly.
5. Fill greased muffin cups 2/3 full.
6. Bake in a 400 degree oven for 20 to 25 minutes until golden brown.
7. Serve hot.
