Marshy Blueberry Muffins Recipe

Makes 12 muffins


  • 1/2 cup butter
  • 1 cup sugar + 2 tsp sugar for top
  • 2 eggs
  • 2 cup flour (unsifted)
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup milk
  • 1 tsp vanilla
  • 2 1/2 cup blueberries


1. On low speed, cream butter and 1 cup sugar until fluffy.
2. Add eggs, one at a time, and mix until blended.
3. Sift dry ingredients and add alternately with milk and vanilla.
4. Mash 1/2 cup blueberries and stir by hand.
5. Grease muffin tins well with butter and grease top surface of pans as well.
6. Pile mix high in each muffin cup.
7. Sprinkle sugar over tops.
8. Bake in 375 degree oven for 30 minutes.
9. Cool in pan at least 30 minutes.
