Blueberry Streusel Muffins Recipe

Makes 12 muffins

Ingredients:

  • 1/3 cup sugar
  • 1/4 cup butter or margarine, softened
  • 1 egg, beaten
  • 2 1/3 cups flour
  • 4 tsp baking powder
  • 1/2 tsp salt
  • 1 cup milk
  • 1 tsp vanilla
  • 1 1/2 cups blueberries, fresh or frozen
  • Streusel:
  • 1/2 cup sugar
  • 1/3 cup flour
  • 1/2 tsp cinnamon
  • 1/4 cup butter or margarine


Instructions:

1. In a mixing bowl, cream sugar and butter.
2. Add egg; mix well.
3. Combine flour, baking powder and salt; add to the creamed mixture alternately with milk.
4. Stir in vanilla.
5. Fold in blueberries.
6. Fill 12 greased or paper-lined muffin cups two-thirds full.
7. In a small bowl, combine sugar, flour and cinnamon; cut in butter until crumbly.
8. Sprinkle over muffins.
9. Bake at 375 for 25 to 30 minutes or until browned.
