Blueberry Muffins Recipe

Makes 12 muffins

Ingredients:

  • 2 cups flour
  • 2 eggs, unbeaten
  • 1 1/4 cup sugar
  • 1/4 cup vegetable oil
  • 3 tsp baking powder
  • 1 cup milk
  • 1 tsp salt
  • 2 cup blueberries


Instructions:

1. Mix dry ingredients together.
2. Add eggs, oil, and milk, mix well.
3. Stir in blueberries. (Best to use fresh berries as the batter can turn purple when frozen ones are used.) Do not overmix.
4. Fill greased or paper-lined muffin cups two-thirds full.
5. Bake at 375 for 20-25 minutes.
6. Serve warm.
