Blueberry Muffins Recipe

Makes 12 muffins

Ingredients:

  • 1/2 cup butter, softened
  • 1 cup sugar
  • 2 eggs
  • 2 cups flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup 1% low-fat milk
  • 1 tsp vanilla
  • 2 1/2 cup blueberries
  • Sugar


Instructions:

1. Preheat oven to 375F.
2. In a large mixing bowl, cream butter, sugar and eggs.
3. Sift dry ingredients together and add alternately with milk and vanilla to the creamed mixture.
4. Fold berries into the batter and spoon into greased muffin pan.
5. Sprinkle with sugar and bake 30 minutes.
6. Leave the muffins in the muffin tin 3-5 minutes after baking, so they are easier to remove from the pan.
