Blueberry Lovers' Muffins Recipe

Makes 12 muffins

Nutrition (per muffin): 204 calories, Total Fat 4 g (17% of calories)

Ingredients:

  • 2 cup all-purpose flour
  • 1/3 cup sugar
  • 1/4 tsp salt
  • 4 tsp baking powder
  • 1/4 tsp ginger
  • 1 tsp ground nutmeg
  • 1 1/2 tsp cinnamon
  • 3 1/2 cup Kellogg's 40+ Bran Flakes Cereal
  • 2 cup skim milk
  • 3 egg whites
  • 3 tbsp vegetable oil
  • 1 1/2 cup fresh or frozen blueberries


Instructions:

1. Stir together flour, sugar, salt, baking powder and spices; set aside.
2. In large mixing bowl, combine KELLOGG'S 40+ Bran Flakes cereal and milk.
3. Let stand 2 minutes or until cereal is softened.
4. Add egg whites and oil; beat well.
5. Add dry ingredients, stirring only until combined.
6. Gently stir in blueberries.
7. Portion batter evenly into 12 lightly greased 2 1/2-inch muffin pan cups.
8. Bake in 400 degree F oven about 23 minutes or until light golden brown.
9. Serve hot.
