Blackberry Pie Recipe

Serves 6 to 8

Ingredients:

  • Crust:
  • 1 recipe plain pastry mix. or 1 9-oz box pie crust mix
  • 1/4 cup unbleached white flour
  • Filling:
  • 4 cups fresh blackberries
  • 1 cup sugar
  • 1 1/2 tbsp fresh lemon juice
  • 1 tsp fresh lemon rind, grated
  • 4 tbsp flour
  • 1/8 tsp salt
  • 1 tsp margarine
  • 1/2 tsp sugar, for top crust
  • Variation:
  • 4 cups fresh raspberries instead of blackberries



  • Instructions:

    1. Preheat oven to 450 F.
    2. For crust, follow directions in recipe or on box for one 2-crust pie.
    3. Line bottom and sides of one 9-inch pie pan with pie dough.
    4. Set pan and remaining dough aside.
    5. For filling, in a mixing bowl, place blackberries, sugar, lemon juice, lemon rind, flour, and salt.
    6. Mix thoroughly.
    7. Pour mixture into pie shell.
    8. Dot with margarine.
    9. For top crust, on a well-floured board, roll remaining dough to a 10-inch diameter.
    10. Slice into long 1/2-inch strips and place strips across top of pie in a criss-cross pattern.
    11. Pinch edges down around pie.
    12. Sprinkle top with sugar.
    13. Place on a jelly roll pan.
    14. Bake in a 450 F oven for 10 minutes.
    15. Reduce heat to 350 F.
    16. Bake for 50 to 60 more minutes until pie crust is golden brown.
    17. Let cool.
