Berry Muffins Recipe

Makes 12 muffins

Ingredients:

  • 2 cups biscuit mix
  • 1 cup unflavored yogurt
  • Non-nutritive sweetener to equal 1/4 cup plus 2 tbsp sugar
  • 1 egg
  • 1 cup berries, blueberries, blackberries, etc.
  • 2 tsp grated lemon peel


Instructions:

1. Preheat oven to 425 F. Grease a 12-muffin (2 1/2-inch) tin.
2. Combine mix and sweetener equivalent to 1/4 cup sugar in bowl; add yogurt.
3. Add egg; beat with fork until well combined.
4. Fold berries gently into batter with rubber spatula; place about 1/4 cup batter into each muffin cup.
5. Combine lemon peel and remaining sweetener and mix well.
6. Sprinkle over batter; bake until golden brown, 20 to 25 minutes.
7. Serve hot.
