Beach Plum Pudding Recipe

Serves 8 to 10

Ingredients:

  • 2 tbsp butter
  • 1 1/2 cups sugar
  • 2 eggs, lightly beaten
  • 1 tsp vanilla
  • 1 1/2 cups milk
  • 2 cups flour
  • 1/4 tsp salt
  • 3 tsp baking powder
  • 1 cup pitted beach plum
  • Sauce:
  • 2 tbsp butter
  • 2 cups water
  • 2 tbsp cornstarch
  • 1 cup sugar
  • 1/2 cup pitted beach plums
  • 1 tsp vanilla


  • Instructions:

    1. Preheat oven to 350 degrees.
    2. Butter a 9x13-inch glass baking dish.
    3. Cream butter and sugar and add eggs, vanilla, and milk.
    4. Sift together flour, salt, and baking powder.
    5. Combine both mixtures.
    6. Roll beach plums in additional flour to coat and stir in.
    7. Pour into prepared baking dish. Bake for 30 minutes.
    8. While pudding is baking, make sauce. In saucepan, melt butter in water
    9. Combine cornstarch and sugar, and add to melted butter.
    10. Add beach plums and cook over moderate heat until sauce is thickened.
    11. Remove from heat and add vanilla.
    12. Serve pudding warm with sauce.
