Beach Plum Pudding Recipe
Serves 8 to 10 Ingredients: 2 tbsp butter1 1/2 cups sugar2 eggs, lightly beaten1 tsp vanilla1 1/2 cups milk2 cups flour1/4 tsp salt3 tsp baking powder1 cup pitted beach plum Sauce:2 tbsp butter2 cups water2 tbsp cornstarch1 cup sugar1/2 cup pitted beach plums1 tsp vanilla
Instructions: 1. Preheat oven to 350 degrees. 2. Butter a 9x13-inch glass baking dish. 3. Cream butter and sugar and add eggs, vanilla, and milk. 4. Sift together flour, salt, and baking powder. 5. Combine both mixtures. 6. Roll beach plums in additional flour to coat and stir in. 7. Pour into prepared baking dish. Bake for 30 minutes. 8. While pudding is baking, make sauce. In saucepan, melt butter in water 9. Combine cornstarch and sugar, and add to melted butter. 10. Add beach plums and cook over moderate heat until sauce is thickened. 11. Remove from heat and add vanilla. 12. Serve pudding warm with sauce.
