Power Muffins Recipe

Makes 12 muffins

The muffins are very dense and rise very little during baking.

Ingredients:

  • 2 cup flour
  • 1 cup raisin bran, slightly crushed
  • 1 cup oatmeal
  • 1 1/2 tsp baking soda
  • 2 egg whites
  • 3/4 cup frozen apple juice, concentrate, thawed
  • 1/2 cup low fat yogurt, any flavor
  • 1 cup mashed bananas
  • 1 cup raisins soaked 10 minutes in boiling water


Instructions:

1. Combine flour, raisin bran, oatmeal and baking soda in a large bowl.
2. Beat egg whites in a small bowl until stiff peaks form, set aside.
3. Add apple juice, yogurt, bananas, and raisins to the flour mixture and stir to blend.
4. Fold in egg whites and mix well.
5. Spoon batter into paper liners or a no-stick muffin pan.
6. Bake at 400 degrees for 20 min
