Banana Pancakes Recipe

Serves 10 to 12

Ingredients:

  • 2/3 cup unbleached flour
  • 1/2 cup whole-wheat flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1 1/3 cup milk
  • 2 tbsp oil
  • 1 medium ripe banana, finely chopped


Instructions:

1. Combine flours, baking powder and salt in a mixing bowl.
2. Mix together milk and oil and stir into dry mixture just enough to moisten all ingredients, then fold in banana.
3. Spoon onto a hot, well greased griddle.
4. Turn once. Makes 10 to 12 pancakes.
