Banana Oatmeal Muffins Recipe

Makes 12 muffins

1 cup chopped peaches can be used instead of the bananas, to make Peach Oatmeal Muffins.

Per Muffin: Calories 162 Protein 3.5g Fat 5.1g Carbohydrates 26.4g Sodium 242mg.

Ingredients:

  • 1/4 cup butter or margarine softened
  • 3/4 cup brown suger packed
  • 1 egg beaten
  • 1 cup buttermilk
  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp allspice
  • 2 medium bananas chopped


Instructions:

1. Cream together butter and brown suger.
2. Mix in egg and buttermilk.
3. Mix together oats, flour, baking powder, salt and allspice.
4. Add to creamed mixture.
5. Stir in Bananas.
6. Spoon into greased or paper lined muffin pan, filling almost full.
7. Bake at 400 to 425 degrees for 20 to 25 minutes until golden brown.
