Banana-Pineapple Kabobs Recipe

Serves 6

Per Serving: 139 Calories, 0.8g Protein, 0.4g Fat, 33g Carbs, 0 Cholestrol, 6mg Sodium, 2g Fiber.


Ingredients:

  • 1 whole vanilla bean
  • 1/3 cup brown sugar
  • 1/4 cup water
  • 1 tsp margarine (optional)
  • 1 pn salt (optional)
  • 4 bananas
  • 1/2 small pineapple



  • Instructions:

    1. Slit vanilla bean lengthwise and scrape out sticky black seeds.
    2. Place seeds and pod in small heavy bottomed pot along with remaining ingredients except fruit.
    3. Bring to a boil, stirring constantly.
    4. Reduce heat and simmer for 2 to 3 minutes. Stir till sugar has dissolved.
    5. Remove from heat. If glaze hardens, reheat before using.
    6. Prepare grill.
    7. Peel bananas; peel and core pineapple. Cut into bite-sized pieces.
    8. Alternate bananas and pineapple on skewers.
    9. Place skewers on hot grill and cook 5 to 10 minutes, turning once.
    10. When hot, baste with glaze, two or three times. Turn and baste again.
