Apricots in Brandy Recipe
Serves 4 to 8
Freshly gathered apricots are the best for this. Make sure they are not over-ripe! If the apricots are clingstone, they will require more scalding.
Ingredients: 1/2 lb sugar
1 lb apricots
Cognac or brandy
Instructions: 1. Place the sugar in a pot and cover with enough water so that it will completely cover the fruit. Don't add the apricots yet!
2. Boil and skim.
3. Put in the apricots, and let them remain five or six minutes.
4. Take them out and lay them on dishes.
5. Boil the syrup till reduced in half.
6. When the Apricots are cold, put them in bottles, and cover them with equal quantities of syrup and Cognac or Brandy.
