Apricot Pie Recipe

Serves 6

If desired, dried peaches, prunes, or apples may be substituted for apricots.

Ingredients:

  • 2 cups dried apricots
  • 3/4 cup sugar
  • 2 eggs
  • 2 tbsp cream
  • 1/4 cup butter


Instructions:

1. Wash apricots.
2. Cover with water.
3. Simmer 40 minutes, or until tender and water is evaporated.
4. Beat until smooth. Cool.
5. Cream butter and sugar.
6. Add well-beaten egg yolks, cream, and apricots.
7. Fold in stiffly beaten egg whites.
8. Pour into baked pastry shell.
9. Bake in moderate oven (400 F) until firm.
