Apricot Holiday Cookies Recipe

Makes 12 cookies

Ingredients:

  • 1/2 cup butter, soft
  • 2/3 cup sugar
  • 1 egg
  • 2 tbsp orange juice
  • 1/2 orange, grated peel
  • 1/4 cup apricot preserves, or orange marmalade
  • 2 cup flour
  • 1 tsp baking powder
  • 1/8 tsp salt


Instructions:

1. Cream together butter and sugar in a large mixing bowl.
2. Beat in egg.
3. Add orange juice and peel and apricot preserves.
4. Mix well.
5. Sift together flour, baking powder and salt in separate bowl.
6. Beat flour mixture into butter mixture until dough comes together.
7. Drop rounded teaspoons of batter, about 2 inches apart, onto foil-lined, greased baking sheets.
8. Bake at 375 F until cookies are brown around the edges, 10 to 12 minutes.
