Apple Carrot Muffins Recipe

Makes 12 muffins


  • 1 1/4 cups flour, whole wheat
  • 1/3 cup sorghum
  • 1 cup wheat bran
  • 1 cup soymilk
  • 1 tsp baking soda
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • 1/3 cup carrots, shredded
  • 1/4 cup oil
  • 1/3 cup apple, finely chopped


1. Preheat the oven to 400 F.
2. Combine flours, bran, baking soda and cinnamon.
3. In another bowl, mix together oil, sorghum, soymilk and vanilla.
4. Combine wet and dry ingredients; mix well.
5. Stir in carrots and apple.
6. Fill greased and floured muffin tins 1/2 full, and bake for 25 minutes.
