Quick and Easy Apple Strudel RecipeServes 8 Ingredients:Instructions:1. Line a 10 x 15-inch jelly roll pan with aluminum foil. Preheat oven to 375 F.2. Coat foil with cooking spray. 3. In a food processor, grind bread into fine bread crumbs. 4. Place crumbs in a pie plate and toast in oven until golden, about 5 minutes. 5. Watch carefully to prevent burning. 6. In a large bowl, combine apples, raisins, lemon juice and lemon zest; toss to mix. 7. In a small bowl, stir together sugar and cinnamon. 8. In another small bowl, combine melted butter and oil. 9. Unroll phyllo and place on a large baking sheet; cover with plastic wrap and top with a slightly dampened kitchen towel to prevent phyllo from drying out. 10. Place 1 phyllo sheet on a sheet of plastic wrap. 11. Using a pastry brush, dab with a part of butter-oil mixture; coat with cooking spray. 12. Sprinkle with part of bread crumbs. 13. Repeat layering with remaining filo, butter- oil mixture, cooking spray and crumbs. 14. Top sheet should be brushed with the butter oil mixture and coated with cooking spray. 15. Spread apple filling along one long end of dough, leaving a 2-inch border along the edge and at the sides. 16. Sprinkle cinnamon sugar over apples. 17. Fold bottom edge up over apple filling; fold in at sides. 18. Starting at longer side and using plastic wrap, lift phyllo and carefully roll up like a jelly roll. 19. Place strudel, seam side down, on prepared baking sheet. 20. Brush with remaining butter-oil mixture. 21. Coat with cooking spray. 22. Bake for 15 minutes. 23. Reduce oven temperature to 350 F and bake for 15 minutes longer or until golden. 24. Serve warm. |
