Little Fried Pies Recipe

Serves 12

Ingredients:

  • 4 cup dried apples or peaches
  • 2 cup water
  • 1/2 cup sugar
  • 1/2 tsp ground cinnamon
  • Vegetable oil
  • Sugar
  • Fried pie pastry:
  • 3 cup all-purpose flour
  • 1 tsp salt
  • 3/4 cup shortening
  • 1 egg, beaten
  • 1/4 cup water
  • 1 tsp vinegar


  • Instructions:

    1. Combine flour and salt; cut in shortening with pastry blender until mixture resembles coarse meal.
    2. Combine egg and water; sprinkle over flour mixture.
    3. Add vinegar, and lightly stir with a fork until dry ingredients are moistened.
    4. Shape into a ball.
    5. Wrap pastry in waxed paper; chill at least 1 hour.
    6. Combine apples and water in a large saucepan; bring to a boil.
    7. Reduce heat; cover and simmer about 30 minutes or until tender.
    8. Cool; mash slightly, if necessary.
    9. Stir in 1/2 cup sugar and cinnamon, and set aside.
    10. Divide pastry into thirds; roll each portion to 1/4-inch thickness on waxed paper.
    11. Cut into 5-inch circles.
    12. Place about 2 tablespoons apple mixture on half of each pastry circle.
    13. To seal pies, dip fingers in water, and moisten edges of pastry circles; fold circles in half, making sure edges are even.
    14. Press edges of filled pastry firmly together using a fork dipped in flour.
    15. Heat 1/2 inch of oil to 375 degrees in a large skillet.
    16. Fry pies until golden brown on both sides, turning once.
    17. Drain well on paper towels.
    18. Sprinkle with sugar while warm.
