Light and Fluffy Apple Pancakes Recipe

Serves 6


  • 2 cups whole wheat pastry flour
  • 1/2 tsp cinnamon
  • 1/2 cup cornmeal
  • 1/4 cup apple butter
  • 2 tbsp Ener-G or cornstarch
  • 2 cups light soy milk
  • 2 tsp baking powder
  • 1/8 cup maple syrup
  • 1/2 tsp baking soda
  • 1/4 tsp apple cider vinegar


1. Mix dry ingrediants together.
2. Then add remaining ingrediants.
3. Make sure all the ingrediants are mixed together well.
4. Batter should be spongy -- not runny or thick.
5. Preheat frying pan over medium heat.
6. Pour a ladle full of batter into pan and cook on both sided until golden brown.
7. Makes 6 large pancakes. These are very filling!
