Hazelnut Apple Pancakes Recipe

Makes 12 pancakes

Ingredients:

  • 1 1/4 cups flour
  • 1/4 cup hazelnuts, toasted, finely ground
  • Pinch of salt
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 Egg Beaters 99% egg substitute, or equivalent to 1 egg
  • 1 1/3 cups nonfat milk, or buttermilk
  • 1/4 cup applesauce
  • 1 large Granny Smith apple, peeled, diced
  • 1/2 tsp vanilla


Instructions:

1. To toast hazelnutes, bake on sheetpan until golden brown and hull starts to break off.
2. Rub hull to remove.
3. Grind to nice fine meal.
4. In bowl put flour, hazelnuts, baking powder, baking soda, applesauce, egg beaters, nonfat milk, and vanilla.
5. Stir until it comes together.
6. Add apple or any fruit you prefer.
7. When top bubbles, flip over.
