Fresh Chutney RecipeMakes 3 to 4 cups Ingredients:Instructions:1. Remove any visible seeds from the lemon.2. Chop lemon to measure 1/4 cup; set aside. 3. Chop ginger until minced. 4. Chop garlic until minced. 5. Combine lemon, ginger, garlic, nectarines, raisins, brown sugar, vinegar and curry powder in medium saucepan; mix well. 6. Bring to a boil; boil 2 minutes, stirring occaisionally. 7. Cool. 8. Add flaked coconut and cream of coconut; mix well. 9. Cover chutney mixture; refrigerate overnight to allow flavors to blend. |
