Equal Dutch Apple Pancake Recipe

Serves 4

Calories per serving: 229.
"Traditional" calories: 450.
Diabetic Exchange: 1 medium fat meat, 1 bread, 1 fruit, 1 fat.

Ingredients:

  • Batter:
  • 4 eggs
  • 1/2 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/8 tsp salt
  • 1/2 cup skim milk
  • 2 tbsp diet margarine, melted
  • 1/8 tsp cinnamon
  • Filling:
  • 2 tbsp diet margarine
  • 1 tart apple, large, pared and sliced 1/4-inch thick
  • 1/2 tsp cinnamon
  • Glaze:
  • 8 equal packets
  • 1/2 tsp cinnamon
  • 3 tbsp boiling water


Instructions:

1. Combine batter ingredients in blender or food processor; mix until smooth.
2. Let rest 30 minutes.
3. For filling; melt margarine in a 10-inch oven proof skillet.
4. Add apple slices, sprinkle with cinnamon and toss over low heat for 3 minutes.
5. Pour batter over apples and place in preheated 425^ oven for 15 minutes.
6. Remove from oven.
7. Blend glaze ingredients and drizzle over top of pancake.
8. Cut into 4 wedges to serve.
