Autumn Apple Muffins Recipe

Makes 12 muffins

Ingredients:

  • 1 egg, slightly beaten
  • 2 tbsp soft butter
  • 1/4 cup sugar
  • 1/4 cup 2% yogurt or 3/4 tsp lemon juice and 2% milk
  • 1/3 cup 2% milk
  • 1/2 cup bran
  • 1 medium apple, grated
  • 1/2 cup raisins, soaked
  • 1/2 cup rolled oats
  • Dry Ingredients
  • 1/3 cup wholewheat flour
  • 1/3 cup all-purpose flour
  • 3/4 tsp baking powder
  • 1/2 tsp baking soda
  • 3/4 tsp cinnamon
  • 1/4 tsp salt


Instructions:

1. In large bowl, combine the first nine ingredients.
2. Sift Dry Ingredients together.
3. Add to bran mixture, stirring until moistened.
4. Spoon into muffin cups.
5. Bake at 425 F for about 20 minutes or until golden brown.
