Applesauce Raisin Muffins Recipe

Makes 12 muffins

Ingredients:

  • 2 cup unsifted all purpose flour
  • 1/2 cup light brown sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 cup (1/2 stick) butter or margarine
  • 1 cup thick applesauce
  • 1/4 cup milk
  • 1 large egg
  • 1/2 cup dark seedless raisins


Instructions:

1. Heat oven to 425F.
2. Grease 12 muffin cups.
3. In a bowl, combine dry ingredients and blend.
4. Melt butter in a saucepan.
5. Remove from heat; stir in applesauce and milk.
6. Beat in egg.
7. Stir in applesauce mixture into dry ingredients and, when well blended, stir in raisins.
8. Bake 15 to 20 minutes.
9. Let stand 5 minutes before removing muffins from tin.
