Applesauce Muffins Recipe

Makes 24 muffins

Ingredients:

  • 1 1/2 cups sugar
  • 1/2 cup butter or margarine, softened
  • 2 eggs
  • 2 cups flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp baking soda
  • 1/2 tsp ground ginger
  • 1/4 tsp salt
  • 1 cup applesauce


Instructions:

1. In a mixing bowl, cream sugar and butter by hand.
2. Add eggs, one at a time, beating well after each addition.
3. Combine dry ingredients.
4. Add to the creamed mixture alternately with applesauce.
5. Mix just until combined.
6. Fill greased or paper-lined muffin cups 2/3 full.
7. Sprinkle some sugar on top.
8. Bake at 350 F for 20 to 25 minutes.
9. Cool on a wire rack.
