Apple Mint Chutney Recipe
Makes 10 pints
Ingredients: 2 large lemons
6 cup apples, peeled and chopped
6 cup onions, chopped
3 cup tomatoes, peeled and diced
2 1/2 cup sugar
2 cup cider vinegar
1 1/2 cup raisins
2/3 cup fresh mint, lightly packed
1/4 cup fresh parsley, chopped
1/2 tsp salt
1/2 tsp cinnamon
Pinch cayenne pepper
Instructions: 1. Pare outer rind from lemons and cut in thin strips.
2. Squeeze and strain lemons into stainless pan.
3. Stir in remaining ingredients; bring to boil.
4. Reduce heat to low; simmer for 1 1/2 hours or until thickened.
5. Fill and seal jars.
