Apple Chutney Recipe

Makes 8 to 10 pints


  • 1 qt cider vinegar
  • 6 red or green chili peppers, seeded and chopped
  • 6 lb very tart apples (sour), peeled, quarter and cored
  • 6 lb hard green pears, peeled, cored and cut into strips
  • 3 cup sugar
  • 2 tbsp pickling salt
  • 1/2 lb seedless raisins
  • Sugar to taste
  • Cayenne to taste
  • 1/4 lb garlic peeled and chopped
  • 1/2 lb gingerroot, peeled and chopped


4. In large preserving kettle mix the vinegar, sugar, raisins, apples, garlic cloves, gingerroot, peppers, and salt.
5. Bring to a boil and simmer until the apples are mushy and transparent.
6. If neccessary, add a little more vinegar.
7. Taste and add sugar and cayenne as desired.
8. Then add the pears and simmer until the pears are tranparent but not overcooked.
9. Spoon into hot jars and seal.
