Apple-Ginger Chutney Recipe

Serves 5

Ingredients:

  • 3 lbs tart apples, peeled, cored and finely chopped
  • 2 cups brown sugar, packed
  • 2 1/2 cups cider vinegar
  • 1 1/2 tbsp salt
  • 1 1/2 tsp ground ginger
  • 1 tsp ground allspice
  • 1 tsp ground cloves
  • 1 green peppers, finely chopped
  • 1 medium onion, finely chopped
  • 1/2 cup ginger preserved in syrup, finely chopped
  • 1/2 cup golden raisins, grated and peeled
  • Juice of 1/2 lemon


Instructions:

1. In pan bring first seven ingredients to boil.
2. Simmer for 10 minutes.
3. Add rest of ingredients and cook for l hour.
4. Ladle into prepared jars and process.
5. Give 1 month to mature.
