Scrambled Eggs and Ham Recipe

Serves 2

Ingredients:

  • 2 oz boiled ham, cut into strips
  • 4 large eggs, beaten
  • 2 tbsp sliced green onion
  • 1/4 cup whole milk
  • 1 tbsp butter or margarine
  • 1/4 cup shredded cheddar cheese
  • 1/4 tsp dried basil, crushed


  • Instructions:

    1. In a 7-inch pie plate combine ham, green onion, butter or margarine and basil.
    2. Microwave, uncovered, on high (100%) for 1 to 1 1/2 minutes or until the mixture is heated through.
    3. Meanwhile, stir together beaten eggs and milk.
    4. Pour over ham mixture in pie plate.
    5. Microwave, uncovered, on medium (50%) for 4 to 5 minutes or until eggs are nearly set, pushing cooked portions to center of dish several times during cooking.
    6. Sprinkle with cheese.
    7. Microwave, uncovered, on high (100%) for 30 seconds to 1 minute more or until cheese is just melted.
